Nourish with SuperFoods: Lemon-Quinoa Sweet Potato Mash with Rosemary

In the spirit of the season, we’re excited to share an AKAR SuperFood-inspired dish that will elevate your table and embodies the ethos of ingredients that nurture radiant skin—a recipe sure to earn you compliments.

 

What you’ll need

  • 2 large sweet potatoes, peeled and cubed
  • 1 cup cooked quinoa
  • Zest of 1 lemon
  • Juice of 1/2 lemon (adjust to taste)
  • 2 tbsp olive oil or melted butter
  • 1-2 sprigs fresh rosemary, plus extra for garnish
  • Salt and pepper to taste
  • Optional garnish: fresh herbs like thyme or parsley

 

Instructions

  1. Boil the Sweet Potatoes: In a large pot, add cubed sweet potatoes and cover with water. Bring to a boil, then reduce to a simmer until the potatoes are soft, about 15-20 minutes. Drain and set aside.
  2. Infuse the Olive Oil: While the potatoes cook, warm the olive oil with 1-2 rosemary sprigs over low heat for about 5 minutes, allowing the rosemary to infuse its flavor. Discard the rosemary sprigs and set the infused oil aside.
  3. Prepare Quinoa: If you don’t already have cooked quinoa, cook it according to package instructions while the sweet potatoes are boiling.
  4. Mash and Mix: In a large bowl, mash the sweet potatoes until smooth. Fold in the cooked quinoa.
  5. Add Flavor: Stir in the lemon zest, lemon juice, and the rosemary-infused olive oil. Season with salt and pepper to taste.
  6. Garnish and Serve: Sprinkle fresh herbs on top if desired and add a small rosemary sprig as a festive garnish. Serve warm.
