With the heat of the summer quickly approaching, we tend to crave lighter, crisper & more refreshing meals than those of prior seasons. Having a delicious salad on hand as a quick and easy, yet delicious and healthy meal is perfect for these hot months. Below are a few recipes of our favorite summer salads that also have skin benefits! We hope you enjoy them as much as we do!
1. Berry Beautiful Salad
Ingredients: (Serving Size - 1)
1/4 Cup Blueberries
1/4 Cup Strawberries, sliced
2 Cups Fresh Baby Kale
1/4 Cup Grape Tomatoes, halved
1 Tbs Olive Oil
1/2 Lemon (squeezed)
1 Tbs Organic Honey
Salt/Pepper to taste
1/4 Cup Chopped Almonds
Optional Protein: 1 Grilled Chicken Breast
How To: Combine all ingredients in a large bowl & enjoy! Chef's tip: Squeeze the lemon atop the Kale first and massage with your hands for about a minute. This will soften the texture and help to take away any bitter taste.
Why It's So Great: Berries are packed with antioxidants & vitamins A, C & E - all help to promote youthful, radiant skin. Kale is full of Vitamin K which decreases the visibility of dark circles & tightens skin.
2. Avocado Motto Salad
Ingredients: (Serving Size - 1)
2 Cups Baby Spinach
1/2 Cup Grape Tomatoes, halved
1/2 Hass Avocado, smooshed
1/4 Red Onion, sliced
1 Tbs Olive Oil
2 Tbs Red Wine Vinegar
Salt/Pepper to taste
Optional Protein: 1 Grilled Chicken Breast
How To: Combine all ingredients in a large bowl & toss until the avocado, oil & vinegar create a creamy dressing all over the salad. Who needs unhealthy ranch with this substitute!?

3. Twisted Caesar Salad
Ingredients: (Serving Size - 1)
Dressing:
1 Cup Mayonnaise
2 tsp Garlic, minced
1/2 tsp Worcestershire Sauce
2 tsp Dijon Mustard
2 Tbs Fresh Lemon Juice
Salt/Pepper to taste
Salad:
2 Cups Romaine Lettuce
Small Handful Whole Wheat Croutons
1 Batch Dressing (ingredients listed above)
1 Tbs Parmesan Cheese, freshly grated (optional)
Optional Protein: 1 Grilled Chicken Breast
How To: Toss homemade dressing in a large bowl with the remaining ingredients. Reserve a little parmesan cheese to garnish. Chef's Tip: Prep the dressing in advance so your salad is quick & easy!
Why It's So Great: Romaine lettuce leaves your skin with a healthy glow & revitalizes skin with it's rich supply of vitamins/nutrients. Lemon brightens dull looking skin.
Meal Prep Tip: All of the salads above include an optional protein of grilled chicken. Take time out on your Sunday to prep for your week and grill up a few chicken breasts seasoned simply with just salt & pepper. Save the cooked chicken in a container in the refrigerator for ease throughout the week - trust us, it'll make your life super easy when creating your daily salad masterpieces.
